PERi Chicken Quesadillas

Looking for dinner recipes? Smoky and a little bit spicy, this super simple chicken and cheese quesadilla recipe will be your new go-to. Make enough for seconds and have the leftovers for lunch.

Ingredients

600g chicken thigh fillets
1 packet Nando’s PERi-PERi rub
1 tsp ground cumin
1 tsp cayenne pepper
1 tsp paprika
1 tsp oregano
1 tsp garlic powder
1/4 tsp salt
1 TBSP extra virgin olive oil
2 tsp neutral oil (e.g. sunflower, vegetable or coconut oil)
1 red onion thinly sliced
1 red capsicum (bell pepper) sliced
2 TBSP Nando’s PERi-PERi sauce
250g grated mozzarella or cheddar cheese
8 small tortillas
Nando’s Sweet Chilli Jam
1 lime
1 red capsicum (bell pepper) sliced
To serve
1 TBSP corriander (optional)

Method

Step 1

Cut the chicken thigh fillets into small cubes.

Step 2

In a bowl, marinate the chicken thighs with extra virgin olive oil, Nando’s rub, ground cumin, cayenne pepper, paprika, oregano, garlic powder and salt. Mix well so all the pieces of chicken are coated thoroughly.

Step 3

Heat a large frying pan with 2 tsp oil on medium to high heat. Add in the chicken and cook for 8-9 minutes until fully cooke

Step 4

Add the onion and red pepper and stir fry for 2 minutes then add in the Nando’s sauce. Mix well then set aside. 

Step 5

In another pan on low to medium heat, add a tortilla then cheese on top, chicken then a generous squeeze of the Nando’s Sweet Chilli Jam. Top it with another tortilla and let it cook for 1 minute then flip and leave for another 30 seconds to 1 minute then remove from the pan.

Step 6

Repeat to make 3 more quesadillas.

Step 7

Cut into quarters and serve with coriander, lime and Nando’s Sweet Chilli Jam
