Ingredients
2 Tbsp PERi-PERi sauce (choose your flavour)
4 slices of wholemeal bread, crusts off
4 slices of ham
4 small eggs (egg whites and yolks separated)
25g softened butter
Small handful of chopped parsley
Method
Step 1
Preheat the oven to 170°c fan. Cut crusts off the bread.
Step 2
Get a rolling pin and roll over the bread to get it nice and thin, then spread with butter.
Step 3
Separate the eggs, carefully placing the yolks into a separate bowl to keep them intact. Whisk the egg whites until they form soft peaks, then carefully fold the PERi-PERi sauce into the whites.
Step 4
Brush a muffin tray with butter, then lay the sliced bread in the moulds. (slightly staggered/overlapping, corners poking out)
Step 5
Next put the sliced ham in, then a spoonful of egg white mix. Make a well on top of each, then place the yolk in one by one, then more egg white mix.
Step 6
Place in the oven and cook for 15 minutes.
Step 7
Remove from oven, plate and add parsley to garnish - serve immediately.
